Chicken Pad Thai has always been my fiancé’s favorite takeout order, so naturally I took it as a personal challenge to create a version I could make at home with cleaner, higher quality ingredients. One of the biggest advantages of cooking at home is that you control everything that goes into the dish. Better oils, sustainable proteins, less sugar, fresher ingredients, and of course…more vegetables. I’ve truly put my heart and soul into perfecting this recipe over time, balancing all of the flavors and textures that make Pad Thai so addictive in the first place.

This version is creamy, crunchy, savory, a little spicy, and packed with bright pops of freshness from the herbs, lime, and veggies. An added bonus…this comes together in under 30 minutes, making it one of my favorite weeknight meals when I want something cozy but still intentional and nourishing.
